Bread, crumb bar and cookies

I’ve had a busy baking week! I baked some banana-blackberry-chocolate chip bread last week. I used this recipe by Joy the Baker, replacing the cranberries with a cup of blackberries and added in 1/2 a cup of chocolate chips, because really, why not! The bread came out great. Everybody loved it and had a hard time stopping eating it!
This weekend, I had a beach bbq and brought dessert. I got a bit carried away and made two! In fact, I got so carried away that I didn’t notice the time fly by and showed up late! I baked some raspberry crumb bar from Baked: New Frontiers in Baking. It was really good as well. I should’ve let it cool longer before putting it in the tupperware though, by the time I got to the beach it had lost part of its bar shapped and turned partly into a crumble. People still loved it and asked for more though, so I’m still calling this one a success!
The other dessert I baked for the bbq was lemon cookies, once again, from Joy the Baker. I just love this blog! They were just the right crunchy/crumblyness to contrast the crumb bar turned crumble. The lemon flavour was light and perfect for a warm summer day in the sun.

Mocha cupcakes and chocolate shortbread

Lately, I find there aren’t enough hours in a day and enough days in a week. Hence this very late post. I’ll make it up to you though, I’m already baking up something for my next post! But let’s focus on this one for now. Last week, I baked some mocha cupcakes: coffee cakes with chocolate icing. I adapted the root beer cake recipe from Baked: New Frontiers in Baking, replacing the root beer with coffee. I did my own chocolate icing though. You can find the recipe for it here. They turned out a bit more dense then the root beer cake. I’m guessing it has to do with the gas in the root beer acting as a leavening agent. They tasted great though!
I also baked some chocolate Viennese shortbread from Le Larousse des Desserts. They turned out great! Though slightly bigger than the recipe said. It was supposed to give out 60 cookies and I only got 20. I must’ve piped the dough with a bigger tip. Piping cookie dough makes for beautiful cookies! I must remember that trick and use it more often.

Big big news!

Hi everyone! Feels like I haven’t update my blog in forever! Though I’ve only skipped one week. I’ve been a busy little bee as it were. I’ve got big big news: I’m now taking orders! You can head to the Buy Cupcakes page to see the prices and ordering procedures. I’m really happy about this. I think it’s a major step for me and I’m ready to take on the challenge! I’ve already had a few orders since I put up the page, some chocolate and orange cupcakes with blue and orange icing swirl and my vanilla-blackberry cupcakes. I’m glad to say the customers were quite happy with their orders. I hope to be getting more soon!
I’ve also been baking some new stuff and experimenting. This weekend I baked a peach crumble. I’m rather happy at how it turned out. I used my mom’s recipe. She mostly did it with apples, but she also did it with peaches once in a while. I added some local strawberries and some cardamom to the mix. I think it gave it a nice little touch. I think I’ve mentioned this before, but I’ll say it again, I love cardamom! I think it’s too rarely used as a spice in dessert. Go ahead, give it a try. Add some to your next crumble. You won’t be sorry!
