Lately, I find there aren’t enough hours in a day and enough days in a week. Hence this very late post. I’ll make it up to you though, I’m already baking up something for my next post! But let’s focus on this one for now. Last week, I baked some mocha cupcakes: coffee cakes with chocolate icing. I adapted the root beer cake recipe from Baked: New Frontiers in Baking, replacing the root beer with coffee. I did my own chocolate icing though. You can find the recipe for it here. They turned out a bit more dense then the root beer cake. I’m guessing it has to do with the gas in the root beer acting as a leavening agent. They tasted great though!

I also baked some chocolate Viennese shortbread from Le Larousse des Desserts. They turned out great! Though slightly bigger than the recipe said. It was supposed to give out 60 cookies and I only got 20. I must’ve piped the dough with a bigger tip. Piping cookie dough makes for beautiful cookies! I must remember that trick and use it more often.

This week marks the return of a post per week! I’ve started work again which means I can share my cupcakes and not feel the need to restrain myself from eating a batch of twelve cupcakes all by myself. To highlight my return I decided to go for a classic: chocolate cupcake with chocolate icing. Its a recipe from a book my mom gave me for my birthday simply called Cupcakes from the cupcake bakery Petits Gateaux in Montreal (sorry, links only available in french). They were fabulous! The cake rose very well without over flowing and it was perfectly soft. The icing was really good too although a lot was left over, not really complaining about that one!

With the cupcake dough I also tried out a new cake pan my brother and sister gave me. The mini cakes are really cute. I was happily surprised at how well they got out of the pan, conserving all their detail.

I have wanted to try making pie crust from scratch for a while now and with all the berries around I thought this was the perfect opportunity. Unfortunately, when I got to the grocery store they didn’t have anymore fresh blueberries. Then I thought I’d make an apple pie. It is September after all! So an apple pie is what I made! I had a lot of fun making the pie dough. I foresee more pie making in my future! I took the crust recipe from this wonderful video and took the apple filling recipe here. Joy the Baker is awesome and she has an awesome blog. If you have a minute I strongly recommend browsing through it. The pie turned out great. I can proudly call my first try at pie a success!

Tuittie Fruittie Cake Recipe

Ingredients:
3 c. flour
1 c.
butter
2 eggs,
beaten
1 c.
sour milk
2 tsp.
soda
1 tbsp.
vanilla
2 tbsp.
vinegar
2 c.
sugar
4 tbsp.
cocoa
1 c.
chopped pecans
1 pkg.
chopped dates
Cream sugar and butter well. Add soda to milk. Sift cocoa and flour. Add the beaten eggs to sugar and butter
mixture. Add vanilla and vinegar. Add milk and flour alternately. Add dates and pecans last. Bake at 350
degrees for about 25 minutes.FILLING:
1 lg.
can pineapple
1 c.
sugar

Directions:
Cook pineapple and sugar until syrupy. Set off and cool. Spread on layers, after you have first iced with whipped cream. Then cover the outside with your favorite chocolate icing.
