Turn on to turnip greens

You’ll want to include turnip greens as one of those green leafy veggies you eat on a regular basis. You should eat about 2 cups of cruciferous vegetables about five times a week.
Here’s a delicious way to get some turnip greens into your diet.
2 cups of Turnip Greens
1/2 tablespoon of lemon juice
1 plantain, sliced into 1/2 inch disks
1/2 inch of oil in a pan
- Fill the bottom of a steamer pot with 2 inches of water. While waiting for the water to come to a rapid boil, chop greens. Steam for 5 minutes and toss with dressing.
- Meanwhile, fry the plantains, about 1 minute per side. Remove to a plate with a napkin on it and press them flat with the bottom of a glass or cup. Return to the oil and fry 30 seconds on each side.
- Arrange the greens on a plate. Put the plantains over the greens. Drizzle dressing over the plate.
Dressing
- 3 tablespoons of olive oil
- 1 tablespoons of lemon juice
- 1 clove of garlic, minced
- salt and pepper to taste

Creole Sausage – Bean Bake Recipe

Ingredients:
1 lb. sausage links
1/4 c. water
1/2 c. chopped onion
1/4 c. chopped green pepper
1 med. clove garlic, minced
1 bay leaf
1 tsp. sugar
Dash bottled hot pepper sauce
2 (8 oz.) cans tomato sauce
2 (1 lb.) cans Vancamp’s New Oreleans
Style Red Beans
Directions:
Cut sausages in thirds; place in skillet with water. Cover, cook over low heat for 5 minutes; drain. Brown sausages lightly, add onion, green pepper and garlic; cook until tender. Stir in remaining ingredients; bring to boiling. Pour into 2 quart casserole. Bake uncovered at 350 degrees for 30 to 40 minutes. Makes 6 servings. Serve over rice.

Creamy Salad Dressing Recipe

Ingredients:
1 Ripe mango
1/2 c Orange juice
1 Clove garlic
1 ts Soy sauce
1/4 ts Curry powder
Peel the mango and take out the seed, cut in pieces.
Directions:
Put everything in a blender and mix.
