Smore Pie

The weather is getting colder and colder, which means the camping season is over. Perhaps, like me, you are stuck with a bunch of left over marshmallows and graham crackers from smores supplies. Well I have come up with an idea to help resolve this issue: smores pie! It’s quite simple: graham cracker crust, chocolate ganache and toasted marshmallow. Simply delicious! Here is the recipe:
Graham cracker crust adapted from Joy the Baker:
- 1 1/2 cups finely crushed graham crackers or crisp ginger snap cookies
- 2 tablespoons granulated sugar
- pinch of salt
- 5 tablespoons unsalted butter, melted and slightly cooled
method:
- preheat oven to 350F
- the graham crackers, sugar and salt in a bowl and mix together
- add the butter and combine until all the graham crackers crumbs are covered in butter
- press into a 9 inch pie mold
- bake for 15 minutes
- let cool completely before filling
Ganache filling adapted from Le Larousse des Desserts:
- 250g of chocolate
- 70g of butter
- 1 cup of whipping cream
method:
- melt the chocolate in a double boiler
- whip the butter into the chocolate
- gently whip the whipping cream into the chocolate
- spread into the cooled graham cracker crust
Marshmallow topping:
- about 20 marshmallow
method:
- cut each marshmallow in half
- place on the pie filling
- put the pie under the broiler in the oven, keep a close eye on it it will toast very fast!
It’s a bit of a mess to serve since the marshmallow sticks to the knife, but it’s totally worth a bit of a messy serving session. If you leave the pie in the fridge for a few hours, the ganache will harden and the marshmallow won’t stick to the knife as much, but you won’t get the warm smores side of the pie.

Denver Potato Pie Recipe

Ingredients:
6 eggs
1/2 tsp. onion powder
1/2 tsp. thyme leaves
1/4 tsp. salt
1/8 tsp. pepper
3 c. frozen hash brown potatoes
4 oz. shredded Swiss cheese
1/2 c. diced ham
1/2 c. chopped green pepper
1 tomato, thinly sliced, if desired
Directions:
Heat oven to 350 degrees. Generously grease 9-inch pan. In medium bowl, combine eggs, onion powder, thyme, salt and pepper; beat well. Stir in potatoes, cheese, ham and green pepper; pour into prepared pan. Bake at 350 degrees for 40 to 45 minutes or until set. Garnish with tomato slices.

Mushroom Pilaf Recipe

Ingredients:
1/2 c. chopped green onion
1 c.
fresh mushrooms, halved or sliced
1/2 c.
margarine
2 c.
hot cooked white rice
2 c.
hot cooked wild or brown rice
Directions:
Cook onion and mushrooms in margarine until soft but not browned. Combine with hot cooked white and wild rice. Season to taste with salt and pepper. Turn into heated serving dish and garnish with tomato slices and parsley.
