There is this thing going on all through November called Movember. Men are invited to grow a moustache during the whole month to raise awareness of prostate cancer. They can register online and you can give donations to them or their team and all the money goes to Prostate Cancer Canada. Its pretty awesome. A bunch of guys at work got a team together and are growing their mo. Since this is the half way point, I thought it would be a nice moment to encourage them to keep going… with cupcakes! I, of course, donated money too and I encourage you to do the same, specially if you know someone who is growing a moustache.

To make these cupcakes Movember cupcakes, I made little moustaches out of royal icing. It was my first time using and making royal icing. Its a lot of fun! Royal icing is basically egg whites, powdered sugar and lemon juice, but I added a bit of cocoa powder to make it brown. It starts to harden really fast so you have to be quick. I drew a moustache on a piece of paper that I put under some parchment paper. I then piped the outline and filled it in, slid the paper and started over again. I let them dry over night and they came right off of the parchment paper. I’ll be using this technique more often for sure!

I made peanut butter and jelly cupcakes to accompany these moustaches. The cake is slightly flavoured with some raspberry puree in the dough and filled with raspberry jelly after it’s cooked. I used raspberry, but you can change this to your preferred flavour of puree and jelly. The peanut butter part is all in the icing. I simply replaced most of the plain butter with peanut butter. The icing turned out pretty stiff and dry though. So if you try it, I suggest adding the sifted powdered sugar half a cup at a time until you are satisfied with the texture. I put in 2 cups all at once and it turned into balls. I added milk which softened it right up, but its still a little stiffer then I would have liked. The cupcakes are very good and I’m very happy at how they turned out! Even if the icing is a little stiff. Here is the recipe for 16 cupcakes:

cake:
- 3/4 cup of butter
- 3/4 cup of sugar
- 2 eggs
- 1 tsp of vanilla
- 1 3/4 cups of flour
- 1 1/2 tsp of baking powder
- 1/4 tsp of salt
- 1/2 cup of milk
- 1/3 cup of raspberry puree
- raspberry jelly

method:
- preheat the oven to 350
- start by beating the butter until it is light and fluffy
- add the sugar and beat thoroughly
- add the eggs one at a time and beat in between each addition
- add the vanilla
- sift the flour, baking powder and salt together and combine with the butter/sugar mix
- add the milk and beat on low until smooth
- add the raspberry puree and beat on low until smooth
- line a cupcake pan with paper cups and fill them up to 3/4
- bake for 20 minutes
- when the cupcakes have cooled, fill them up with raspberry jelly

icing:
- 1/4 cup of butter
- 1 cup of peanut butter
- 2 cups of powdered sugar
- 5 tbs of milk

method:
- beat the butter and peanut butter together until it is light and fluffy
- sift the icing sugar and and beat
- add the milk and beat until completely combined
