  • I love hummus. If I thought it would not be harmful to my health to do so, it would probably be the basis of my entire diet…variety must be maintained however. Like they say: Too much of a good thing will make you sick.
  • So, I stick to making this delicious Middle Eastern treat about once a week and I look for variety in the extras.

I overheard someone talking about the hummus they had purchased at the health food store. The variety there is greater than the kind you find prepackaged at the grocery, but not as good as what you can make yourself at home, so I took the idea of the caramelized onions they mentioned and went a step further and added caramelized garlic.

The resulting sweet-savory hummus is delicious. Put this on a pita with a bean burger or just scoop it up with some toasted pita or flat bread slices.

Caramelized Onion, Garlic Hummus

1 large sweet onion, diced

3 tablespoon of olive oil

1/8 teaspoon of brown sugar

5 cloves of garlic, cut in half

1 can of garbanzo beans, rinsed and drained)

2 tablespoon of  tahini

5 tablespoons of lemon juice

1/3 cup of olive oil

Salt and pepper to taste

2 1/2 tablespoons of plain yogurt

1 tablespoon of sweet paprika


  • Heat olive oil in a skillet over medium heat. Add onions and brown sugar, stir, and cook for 10 minutes. Add garlic and cook for 10 minutes more, tossing often to avoid burning. Remove from heat and let cool.
  • Use a blender to combine the rest of the ingredients. If the consistency is too stiff, add a little more olive oil or a bit of water.
  • Add cooled onion and garlic to bean mixture and blend until smooth. Pour into bowl, cover, and let sit in fridge for several hours to allow the flavors to combine.

Italian Bean Soup Recipe

1 c. or 1/2 pkg. pea beans
1 tbsp.
minced onion
1/2
clove garlic, minced
1 sprig
parsley, minced
1/4 c.
olive oil
1 stalk
celery, minced
1/2
tsp. salt
1/4
tsp. pepper
1 c.
canned Italian tomatoes
1 c.
chopped cabbage or spinach
1 c.
cooked macaroni
Grated
Parmesan cheese

Directions:
Soak beans until soft. Drain, add 5 cups water and simmer until tender, adding more water as it cooks away. Saute onion, garlic, parsley and celery in olive oil until lightly browned. Add salt, pepper, tomatoes and cabbage or spinach. Bring to a boil and add beans with the macaroni. Simmer 30 minutes longer. Serve with grated Parmesan cheese. Serves 6.

Creamy Cucumber Soup Recipe

2 lbs. peeled cucumbers, chopped
Salt
and pepper to taste
1/2 c.
hot water
1 med.
onion, chopped
1 clove
of garlic, chopped (optional)
1 green
pepper, chopped (optional)
1 tbsp.
butter or margarine
2 c.
light cream
2 tbsp.
chopped parsley

Directions:
Combine the cucumbers, salt, pepper, water, onion, garlic and green pepper in a saucepan and cook until vegetables are tender. Remove from heat and cool. Place in blender container and blend. Place back in the saucepan and add butter and cream. Heat through, then sprinkle with parsley. May be served cold. 6 servings.
