It’s the last few days of my holiday and whilst I savor every last bit of home cooked food, every last moment spent with my dear parents, every relaxing picnic at the beach and cherish every last memory, I have invited the wonderful Joy of Joylicious to share part of HER childhood, her heritage and her memories here with you today. Growing up, I often helped my father tend the garden where we’d grow tomatoes, squash, and
cucumbers to our fill. As his farming roots are deeply embedded into his being from his father and
the Cultural Revolution, once we moved to the US it was one of the few things he brought with him:
gardening. There was something fascinating about watching food grow from seed to plant, then to
flower and finally to sweet, sweet fruit. As a result I now find that it’s become embedded deep within
me, finding life and glory through all things living.

When we bought our first home last year and finally had our own backyard space, Collin and I wasted
no time in getting starting our very own garden. I’ve missed the feeling of the warm Earth beneath
my fingers and toes or the way the Sun smells in your hair after a long day. To be deeply connected to
nature, where two hearts beat as one – what better way to melt away stress and anxiety? What better
notion to achieve pure relaxation?

I’m sharing a very pure and simple recipe today – a melding of both Korean Nangmyeon and cold
Japanese soba noodles. I often buy my eggs through a local organic egg-farmer and with the abundance of cucumbers coming from our garden I figure I’d celebrate the beauty of Summer and perhaps even a little relief from the heat.
Ingredients for Chilled Soba Noodles with 5-minute Egg
Prep Time: 20 minutes Total Cooking time: 35 minutes
Ingredients:
3/4 cup rice vinegar
1/4 cup sugar
1 teaspoon soy sauce
2 garlic cloves, minced
1 teaspoon crushed red chile flakes
1 tablespoon oriental sesame oil
12 ounces soba (Japanese-style) noodles
1 large English hothouse cucumber, halved lengthwise, thinly sliced crosswise
2 farm fresh soft boiled eggs (I did 5-minute)
Directions:
Warm vinegar, sugar, in small saucepan over medium heat, stirring occasionally until sugar
dissolves, about 1 minute. Stir in garlic and jalapeño. Cool. Mix in soy sauce, sesame oil, and
red chile flakes and set aside.
Cook noodles in large pot of boiling salted water until tender but still firm to bite, stirring
occasionally. Drain well. Rinse under cold water; drain again. Transfer noodles to dish-
towel-lined platter to drain. Transfer noodles to large bowl. Add dressing and toss to coat.
(Can be prepared 6 hours ahead. Cover and refrigerate.)
Add cucumbert to noodles and toss gently. Arrange salad on platter. Top with soft boiled egg
and serve immediately.
